The wineries
South Australia is the beating heart of Australian wine. The old-vine Shiraz of the Barossa, the cool-climate elegance of the Adelaide Hills, the maritime reds of McLaren Vale — we know the makers personally. That means barrel tastings in the cellar, vertical flights from the library, and long lunches among the vines that no public booking could ever secure.
The cuisine
Few larders anywhere rival this one. Spencer Gulf king prawns, Coffin Bay oysters, Adelaide Hills cheeses and some of the finest produce markets in the country. We are true experts in South Australian cuisine, designing journeys around chef's tables, producer-led feasts and intimate dinners shaped entirely by the season.
The experiences
Beyond food and wine, we open the whole of the state — the wildlife and white sand of Kangaroo Island, the ancient drama of the Flinders Ranges, the festivals of Adelaide and the artisans who quietly make it all remarkable. This is our home ground, and no one curates it with more care.
